Food Allergies Welcome in Namibia!


As we often have students on the program with a variety of food allergies, I was vigorously practicing my skills of cooking to cater for different dietary needs. This week I prepared a gluten, yeast, dairy, soy free bread that is delicious and impressive!

Recipe: (Source: Bread mix from Abundant Life Foods)

Ingredients:

  • 600ml (2.5 cup)water
  • 45ml (3 Tbsp) oil of your choice
  • 2 cups corn flour
  • 2 cups tapioca flour
  • 2 cups rice flour
  • 2 cups potato flour
  • 10ml (2 tsp) baking powder
  • 1 tsp bicarbonate of soda
  • ½ tsp xanthan gum
  • pinch of salt
  • ½ tsp citric acid

Mix the liquids with the dry ingredients. Leave to stand for 2 minutes and whisk again. Pour into a greased bread pan. Bake at 180°C (350°F) for 1 hour. Brush with egg or oil and grill until brown. Serve hot or cold for an anytime meal.
